Malabar spinach is not a true spinach, but tropical climbing vine that can withstand hot summers, unlike regular spinach. The leaves and stems are best eaten before the plant flowers and can be used either raw or cooked, although it tends to have a gluey texture like okra when cooked. This fast-growing vine will need a trellis to grow on, and prefers well-drained, moisture-retentive soil.
Direct sow after all danger of frost 1/4" deep, or start indoors 6 to 8 weeks before the last frost date. Soak the seeds overnight in water, or scratch the seed coat with a sharp file or sandpaper before planting.
